Homemade Energy Bars
| Ingredients | Amount |

| Espresso Coffee (cooled) | 1-1 1/2 cups |
| Dates (pitted and chopped) | 1 1/2 cups |
| Dried Figs (chopped) | 1 cup |
| Sliced Almonds | 1/2 cup |
| Sunflower Seeds | 1/4 cup |
| Pecans or Walnuts (can use both) | 3/4 cup |
| Hemp Seeds | 1/3 cup |
| Almond Flour | 1 cup |
| Pecan Meal | 1/2 cup |
| Protein Powder of your choice (optional) | 1 cup |
| Unsweetened Cocoa Powder | 2 Tbs |
| Cinnamon | 1/2 tsp |
| Orange Zest | from 2-3 oranges |
| Vanilla Extract | 1 tsp |
| Unsweetened Coconut (shredded) | 1/2 cup |
Directions
Mix the dates and figs in a large bowl with all of the dry ingredients (mix well). Add vanilla and coffee. Add the coffee in parts stirring well each time till you get a moist yet firm consistency.
Lightly grease a glass baking dish (I use a 7.25 x 12 in x about 3 in deep) with coconut oil and mold in the mixture. Cover and place in the freezer.
