Homemade Energy Bars
|Espresso Coffee (cooled)||1-1 1/2 cups|
|Dates (pitted and chopped)||1 1/2 cups|
|Dried Figs (chopped)||1 cup|
|Sliced Almonds||1/2 cup|
|Sunflower Seeds||1/4 cup|
|Pecans or Walnuts (can use both)||3/4 cup|
|Hemp Seeds||1/3 cup|
|Almond Flour||1 cup|
|Pecan Meal||1/2 cup|
|Protein Powder of your choice (optional)||1 cup|
|Unsweetened Cocoa Powder||2 Tbs|
|Orange Zest||from 2-3 oranges|
|Vanilla Extract||1 tsp|
|Unsweetened Coconut (shredded)||1/2 cup|
Mix the dates and figs in a large bowl with all of the dry ingredients (mix well). Add vanilla and coffee. Add the coffee in parts stirring well each time till you get a moist yet firm consistency.
Lightly grease a glass baking dish (I use a 7.25 x 12 in x about 3 in deep) with coconut oil and mold in the mixture. Cover and place in the freezer.
