Homemade Energy Bars
Ingredients Amount
Espresso Coffee (cooled) 1-1 1/2 cups
Dates (pitted and chopped) 1 1/2 cups
Dried Figs (chopped) 1 cup
Sliced Almonds 1/2 cup
Sunflower Seeds 1/4 cup
Pecans or Walnuts (can use both) 3/4 cup
Hemp Seeds 1/3 cup
Almond Flour 1 cup
Pecan Meal 1/2 cup
Protein Powder of your choice (optional) 1 cup
Unsweetened Cocoa Powder 2 Tbs
Cinnamon 1/2 tsp
Orange Zest from 2-3 oranges
Vanilla Extract 1 tsp
Unsweetened Coconut (shredded) 1/2 cup

Directions

Mix the dates and figs in a large bowl with all of the dry ingredients (mix well). Add vanilla and coffee. Add the coffee in parts stirring well each time till you get a moist yet firm consistency. 

Lightly grease a glass baking dish (I use a 7.25 x 12 in x about 3 in deep) with coconut oil and mold in the mixture. Cover and place in the freezer. 

Everything is optional - experiment as you like!
