Great Grains

Any of these grains can be served in a bowl and topped with an equal amount of sauteed veggies and then you can top it all off with some nuts, grated Monterey Jack or Sharp Cheddar cheese.

Directions

Amaranth:

2 Cups water

1 Cup amaranth

Cook for 20 minutes on low heat. When you take the lid off you'll see water on top and grain on the bottom. Stir the pot unit all the amaranth and water are combined. Yields 2 cups cooked.


Short grain Brown Rice:

1 3/4 Cup water

1 Cup rice

Bring water to a boil, add the rice. Bring it back to boil again and then turn the burner to the lowest setting and simmer for 50 minutes. Don't take the lid off until the time is up! Yields 2 1/2 cups cooked.


Long Grain Brown Rice:

2 Cup water

1 Cup rice

Same as for short grain brown rice. Yields 2 1/2-3 cups cooked.



Bulghur:

1 1/2 Cups water

1/2 Cup bulgher

Bring water to a boil, add the bulghur. Turn the burner to the lowest setting and simmer for 40 minutes. Yields 2 cups cooked.


Toasted Bulghur:

1 3/5 Cups water

1/2 Cup bulghur

In a skillet heat 2 Tbsp. safflower oil along with the bulghur and stir the bulghur until it is toasted. (It burns pretty easily, so don't take your eye off of it). Bring the water to a boil and add the toasted bulghur. Turn the burner down to the lowest setting and simmer for 45 minutes. Yields 2+ cups cooked.


Kasha:

1 1/2 Cups water

1/2 Cup kasha

Bring water to a boil, add the kasha. Bring it back to a boil again and then turn the burner to the lowest setting and simmer for 20 minutes. Don't take the lid off until the time is up! Yields 2 cups cooked.



Quinoa: (pronounced keen-wah)

2 Cups water

1 Cup quinoa

Rinse quinoa thoroughly in a small strainer or by running fresh water over the quinoa in a pot. Drain.

Put quinoa and water in 1 1/2 quart saucepan; bring to boil. Reduce heat to simmer; cover and cook until all water is absorbed (10-15 minutes). When done, the grain appears translucent and the germ ring will be visible. Yields 2 cups cooked quinoa
