Feta Cheese Salad
This is a hearty salad that tastes great in the winter or summer! We eat it as a meal unto itself and serve it in bowls with Kalamata olives and sliced French bread on the side. This is also a quick and easy dish to prepare if you're on your way to a potluck.
Yields: 4 cups
|Feta cheese||1.5 Cups|
|Tomato||1 1/3 Cups, diced|
|Red onion||4 tsp, finely diced|
|Green cabbage||2 Cups, thinly sliced cross sections|
|Red pepper||1 Cup, diced|
|Cucumbers||1 Cup, peeled, quartered, diced|
|Basil||4 tsp, finely chopped|
|Lemon juice||1/4 Cup|
|Olive oil||1/2 Cup|
Prepare all the salad ingredients in a large mixing bowl.
Mix salad dressing ingredients in a blender and pour over the salad.
Stir thoroughly with salad utensils and serve. The longer this salad sits, the better it tastes, so make it early and chill it in the refrigerator for an hour before serving.
