Cold Rice Cereal
This is a great refreshingly sweet breakfast for warm Spring and Summer mornings. It's relatively quick and easy to make … and very easy to get hooked on.

| Precooked short grain brown rice | 2 Cups |
| Milk, soy milk or rice milk | 2 Cups |
| Fresh strawberries, quartered | 1/2 Cup |
| Turkish fig pieces, dried/diced | 2/3 Cup |
| Raisins | 2/3 Cup |
| Sunnies | 1/3 Cup |
| Toasted Almonds, halved | 1/3 Cup |
| Honey | 4-6 Tbs |
| Cinnamon | 1/2 tsp |
| Nutmeg | 1/4 tsp |
Directions
Rice should be cooked night before and then cooled. It should have a medium soft texture. Date pieces can be cut and almonds toasted and diced the night before. If you can't find fresh strawberries, frozen strawberries work great too. In fact, I prefer them on really hot mornings.
Begin soaking the rice in the milk. Add other ingredients and continue soaking for a total of 20 minutes (or overnight if your morning schedule is tight). Stir well and serve.
